Corn Ice Cream Joins Cuenca’s September 25 Food Celebration

Corn ice cream paired with a baked humita is one of the combinations planned for Reto del Sabor Cuencano. Elena Narváez, representing Mercado 3 de Noviembre, will present the recipe as part of a celebration of Cuenca’s food traditions, El Mercurio reports.

The program is scheduled for Friday, September 25, 2026, from 4:30 p.m. at Portal Artesanal EDEC. It also includes a Festival de Bandas de Pueblo, with groups from different parishes.
Mote will be the central ingredient in the food challenge, with participants showing different ways of using it in Cuenca cooking.
A recipe still being tried out
Narváez developed the corn ice cream for this occasion. She plans to gauge the response before deciding whether to add it permanently to her offerings. The handmade ice cream uses corn milk and comes in a cone.
She has been making ice cream since 1992 and currently serves customers on the second floor of Mercado 3 de Noviembre.
Mónica Malo, executive director of Corporación Mucho Mejor Ecuador, says this year’s celebration aims to revive Cuenca’s culinary and cultural traditions.
